Have I got an awesome, delicious and fast recipe for you?!?! I’ve been meaning to make oatmeal bites for some time now and I finally made them last week and they were amazing! Plus, it’s been very convenient to have them around, especially when I need something quick while Olivia is begging for my attention or I’m running out the door. They’ll definitely be made around here more often.
- 1 1/2 cups old fashioned oats
- 1/2 cup almond flour
- 1/2 cup dark chocolate chips
- 1/3 cup shredded coconut, unsweetened
- 1 teaspoon cinnamon
- 1/2 cup honey
- 1/2 cup almond butter
- 1/4 cup apple sauce, unsweetened
- 1 teaspoon vanilla extract
In a medium bowl, combine all dry ingredients.
Add all wet ingredients and mix well. Put mixture in refrigerator for about an hour.
Roll cold mixture into small balls, about 1 tablespoon per ball. Keep in refrigerator. They will stay fairly soft, but keep their shape. Sort of like a truffle texture.
