Lemon Cheesecake Cookie Bars

Have I got a great recipe to share with you?!!? I made these bars mainly because every year I get a craving for lemon and apparently now is the time. They’re crunchy and creamy and delicious. They were gone in just a few days and only because Ryan and I Limited ourselves to one piece a day each.

Lemon Cheesecake Cookie Bars Recipe

It all starts by making the cookie layer. Combine all the ingredients in a mixing bowl, creaming butter and sugar first.

Spread mixture evenly on a lined 9×9 baking pan. Hands work very well for this.

Bake on a 400 degree preheated oven for 15-18 minutes, until center is done but not browned. Cool completely. I decided to take the parchment paper out before adding the extra layers and the crust broke because it wasn’t cool enough. No matter though because it’s going to get covered anyways… Just a word of caution.

Next, the cheesecake layer. Making it with whipping topping makes it more frothy and airy than a regular cheesecake, which is denser and creamier.

To make it, cream together sugar, cream cheese and vanilla.

Fold in whipped topping and spread evenly over cooled cookie layer.

Finally, the lemon curd. Whisk lemon zest, lemon juice, sugar and egg in a pan over medium low heat until slightly thick.

Add butter, a little at a time whisking constantly until melted and combined before adding more.

Continue whisking and cooking for about five minutes until mixture thickens and curd forms. Transfer to a small bowl and place covered in refrigerator for at least an hour.

Spread over cheesecake layer and using a knife or spatula “cut” into the cheesecake layer so lemon curd seeps into it.

Chill until everything is set before cutting into 9 pieces and serving.

You could also use the same recipe on a larger baking pan to create the bars with thinner layers, adjusting baking time as necessary. Either way, this combo is delicious!

Ingredients

Cookie Layer

  • 1/2 cup unsalted butter, softened
  • 3/4 cup confectioner’s sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/4 cup flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Cheesecake Layer

  • 1 8oz tub whipped topping
  • 1 8oz package cream cheese, softened
  • 1/3 cup sugar
  • 1/2 teaspoon vanilla extract

Lemon Curd

  • 1 teaspoon lemon zest
  • 3 tablespoon lemon juice
  • 3 tablespoons sugar
  • 1 egg, room temperature
  • 2 tablespoons unsalted butter, cut into pieces

Steps

  1. Make cookie layer: Cream butter and sugar in a mixing bowl. Mix in the egg and flavoring until combined. Add flour, baking powder and salt in batches until all ingredients are well mixed. Spread mixture evenly on a lined 9×9 baking pan. Cook on a 400 degree preheated oven for 15-18 minutes, until center is done but not browned. Cool completely.
