One thing that happens when you have a baby is that you have no choice but to multi-task. anything you want to get done, chances are you’ll be doing it while keeping and eye on the baby or even holding the baby on your hip. It comes with the territory. Most of the time, everything works out alright. Some other times, you leave the cookies in the oven for a little too long. It happened the other day with the first batch of lemon cookies I made. They didn’t burn, but they were cris-py. A little on the hard side. So, I decided to repurpose my hard work into an easy Blueberry and Lemon Cookies Parfait
Let’s face it, yogurt is better with something crunchy in it. It just gives it a little more texture, dimension and taste. Plus, when life gives you overdone lemon cookies, you use them in a parfait.
All you need are a handful of blueberries, some plain or vanilla yogurt and the lemon cookies.
Crush the cookies in a plastic bag. A rolling pin works great for this.
Layer a cup or bowl with yogurt, then cookies crumbles and then blueberries. Repeat as desired.
Simple, quick, easy and delicious.
Plus, you save your “bad” batch of cookies!
